Observation (CORRECTED DURING INSPECTION): Observation:
Previously washed and sanitized vegetable slice on storage rack by 3-compartment sink had food debris on it.
Corrective Action:
Food debris can harbor pathogens which can potentially contaminate food when the vegetable slicer is used. Staff washed and sanitized the vegetable slicer.

Observation (CORRECTED DURING INSPECTION): Observations:
1. Raw meats stored on the floor of in walk-in cooler and walk-in freezer. (one container in cooler and two containers in freezer) underneath racks.
2. Ready-to-eat meat skewer hung on and in contact with storage rack in walk-in cooler.
Corrective Actions:
1. Raw meats on the floor can potentially be contaminated during cleaning of the floor. Raw meats were moved and stored on the bottom shelf in the cooler and freezer by the staff.
2. Foods should not be in direct contact with storage rack as it is not frequently cleaned and sanitized and can therefore harbor pathogens that can potentially contaminate food. Staff voluntarily discarded the meat skewer.

Observation: Observation:
Area underneath the shelves in dry storage and underneath the 3-compartment sink had accumulation of dirt and debris.
Corrective Action:
dirt and debris accumulation provides unsanitary conditions that promote growth of pathogens that can potentially contaminate food and equipment. The aforementioned areas are to be thoroughly cleaned by operator.
