Observation (CORRECTED DURING INSPECTION): Mouse droppings present on surfaces of the pizza press. Staff indicate that the equipment is cleaned and sanitized by staff at ~2pm when they start their shift.
Corrective Action(s): 1) Pizza press must be thoroughly cleaned and sanitized prior to using it again. All surfaces must be free of mouse droppings, flour, and food residues.
2) Ensure pizza press is cleaned and sanitized at the end of each day. Flour and food residues left overnight on and around the pizza press are being used as a food source by mice.

Observation: Minor presence of mouse droppings around the perimeter of the kitchen (ie. on floors underneath tables/equipment in kitchen).
Moderate presence of mouse droppings in the pizza prep area (pizza press, dough mixer, underneath prep table, etc.)
Corrective Action(s): Thoroughly clean and sanitize affected areas. Mouse droppings should be disinfected using bleach/water solution prior to cleaning them up, as they can harbour pathogens. Employees should wear appropriate protective equipment when cleaning up mouse droppings (ie. face mask & disposable gloves).

Observation (CORRECTED DURING INSPECTION): Side entry door (to the kitchen) was propped open at time of inspection. Pests can gain entry into the kitchen when doors are left open.
Corrective Action(s): Keep side entry door closed at all times or install a tight-fitting screen door to allow air circulation into the kitchen while protecting against pest entry.
