Observation (CORRECTED DURING INSPECTION): Cheese sauce cooling in large buckets -internal temperature at 52 deg C cooked about less than an hour ago
Corrective Action(s): Improper cooling methods. Potentially hazardous foods must be cooled fast:

Step 1: 60 deg C to 20 deg C within 2 hours -expedited by wide & shallow pans, ice wands, ice baths, small containers
Step 2: 20 deg C to 4 deg C within 4 hours -transfer to fridge
