Observation (CORRECTED DURING INSPECTION): Food in both of the main prep line coolers was measured at an internal temperature of 10-13 C. Food is left in these units overnight. This is a recurring violation at this premises.
Corrective Action(s): Correction Order issued. All higher-risk foods discarded. Keep all perishables out of this cooler until fixed/replaced and reinspected. Note that failure to comply with the order will result in the issuance of ticket penalties for subsequent violations.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): 1) Meat slicer (used for vegetables) was not properly washed and sanitized after last use.
2) Drinks gun holster liner at bar was visibly contaminated with mould/mildew.
Corrective Action(s): (Both items): Cleaned during inspection. Ensure meat slicer is cleaned and sanitized after use, and the holster liner is cleaned on a regular schedule.

Observation: Both main prep line coolers are failing to maintain food at 4 C or colder. This has been observed at past inspections.
Corrective Action(s): Have the coolers fixed/replaced by the end of this week (8th January 2017). Call for reinspection once fixed. Coolers must be capable of maintaining food at 4 C or colder. Keep all perishable food items out of the coolers until reinspected.
