Observation (CORRECTED DURING INSPECTION): Cleaner stored in bins with "Sanitizer" label. The staff stated that they use cleaner to clean food contact surfaces.
Corrective Action(s): Refill all bins labeled as "Sanitizer" with QUAT based sanitizer at 200ppm concentration. Use QUAT sanitizer to sanitize food contact surfaces (ie food prep tables). Cleaner is inadequate to sanitize food contact surfaces. Ensure that chemicals are stored in properly labeled bins.

Observation (CORRECTED DURING INSPECTION): Middle handwashing station was being used as food prep sink.
Corrective Action(s): Remove the food from this sink. This is a designated handwashing station and must be used for handwashing only.

Observation: Pooling of water observed underneath the two compartment sink and on floors inside the walk in cooler.
Corrective Action(s): Clean up the water. Ensure to adequately dry the floors after moping to prevent water pooling.

Comments

- All handwashing stations supplied with hot/cold running water, soap, paper towels.
- High temperature dishwasher achieved 72C at the plate's level during the final rinse cycle.
- Glasswasher dispensed 12.5ppm iodine sanitizer.
- Dry storage area has adequate space and wire racks.
- No signs of pest activity. A third party pest control company inspects on a monthly basis. Report reviewed at the time of the inspection.
- FOODSAFE trained staff on duty. Verified at the time of the inspection.

Temperature control:
- All coolers (walk in, undercounter, upright) at < or = 4C
- All freezers (reach in, upright) at < or = -18C
- Rice warmer = 66C
- Thermometers available in all refrigeration units.
- Daily temperature log is available and kept up to date. Please continue monitor the coolers/freezers using a temp log.
