-Follow-up inspection to May 28, 2018.
-Cold potentially hazardous foods in prep cooler inserts was at 4C at the time of inspection. Inserts are no longer being over filled.
-Sprout were stored in a mixture of ice and water at the time of inspection.
-3-door prep cooler has been adjusted and was at 3C.
-Operator has adjusted 2-door cooler and temperatures are still ranging from 5C to 7C. Contact service technician to service cooler unit and ensure it can maintain 4C or less at all times.
-Operator still had cardboard lining shelving unit in the 3-door cooler. Immediately discontinue the use of cardboard to line shelving units. All surfaces must be smooth, non-absorbent, and easily cleanable. Cardboard also affects proper air flow in the cooler unit.
-General food storage has improved. Raw meats were found stored below ready-to-eat foods at the time of inspection.
*Do not use the chest freezer as a work surface. Freezer door is hollow and using the meat slicer on top of the cooler unit may damage the door.
