- Handsinks and staff washroom supplied with liquid soap and paper towel for handwashing
- Coolers were operating at acceptable temperatures (4C or colder)
- Refrigerated display units 4C
- 2 door reach in 3C
- Freezers were maintaining product in a frozen state
- Chest freezer -24C
- Small chest freezer -21C
- 2 door reach in -12C
- Soup in hot holding unit was 69C. Reviewed heating procedures for soup. Soup is heated on hot plate to >74C prior to transferring to hot holding unit.
- Manual warewashing completed in 2 compartment sink. Operator knowledgeable about manual warewashing procedures: wash, rinse sanitize, air dry.
- Bleach present for sanitizing step. Plugs present in fill sink compartments to immerse dishes.
- Bleach sanitizer solution present in spray bottles. Concentration measured 200ppm chlorine.
- No signs of pests noted at time of the inspection
- Dry storage area organized with food items on shelving.
- Operator Foodsafe certified. Refresher course completed in 2018.
