A routine inspection was completed:
- Keg walk-in-cooler 2C; kitchen walk-in-cooler 4C; cook-line assembly cooler 4C; Pepsi cooler 4C; kitchen walk-in-freezer -20C; chest freezers -18C or colder; thermometers present; and temps recorded daily. Reviewed temp logs, no concerns.
- Glasswasher had [Cl2] of 50ppm. Test strips present and recorded daily.
- High temperature dishwasher had a rinse cycle temperature of 74C at the plate's surface as per max/min thermometer. Temps recorded daily.
- Quats sanitizer in spray bottles had strength of 200ppm. Test strips present and recorded daily.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- All foods stored in food grade containers; covered; labelled; dated coded; foods stored in groups with raw proteins separate and/or below RTE foods; and foods stored 6" off the floor on racks and shelves.
- No expired foods in use or for sale. FIFO rules being followed.
- General sanitation level is good, improvement seen. Keep up the good work.
- No signs of pests. Monthly pest monitoring done by a professional pest company. Remove all black, bait station boxes from the premises IF they contain rodenticide. No poisons are allowed to be used inside a food premises.
- Staff possess a valid FoodSafe certificate, or a recognized equivalent certificate. Binder with certificates on-site.
- Valid health permit and decal posted.
- The following equipment are NOT in working order:
Ovens below the gas range. Staff do not use.
Convection oven only runs at 500F. Staff only able to use it to melt cheese on nachos.
Cooler drawers below the charbroiler. Staff do not use.
ACTION
Remove aluminum foil, cardboard, and/or saran wrap, covering surfaces (shelves) EVERY night. Clean the surfaces underneath and place new foil, cardboard and/or saran wrap on surface in the morning.
Repair the glasswasher conveyor as it no longer moves the glasses through the machine.
Service ALL the chemical dispensing lines and pumps of the glasswasher, as there is pooling chemicals under the machine. This could indicate a leak somewhere.
Seal the wooden walls and ceiling inside the keg walk-in-cooler, by painting them in a light color. They currently are not sealed and it makes it difficult to clean.
Rearrange the keg walk-in-cooler, to declutter and organize the space better. Recommend purchasing shelving racks for storing product on.
Replace all damaged wood shelves and cupboards beneath the front bar. These surfaces are no longer sealed or cleanable, and it will attract and harbor pests (flies & mice). Replace with materials that are durable, smooth, level, sealed and cleanable. |
