Observation:
Some dust/debris build up above the ceiling tiles beside the vents over the back washing and food prep areas.
Some food debris (rice, etc.) underneath the shelving unit.
Corrective Action(s):
Remove debris on the vent/ceiling tiles in the back area.
Clean up food debris and pay more attention when cleaning underneath equipment, prep table and shelves.

Observation:
Front hand sink dispenser was broken. Paper towel roll provided at the sink.
Corrective Action(s):
Repair or replace paper towel dispenser. This must be in good working order.
Ensure to provide constant supply of liquid soap and paper towels at all times.

Comments

Hand sinks provided with liquid soap and paper towels.
Sanitize (quats) measured 200 ppm.
Walk-in cooler was below 4 deg C.
- Food items covered and labelled as well as stored off the floor.
Upright freezer was at -18 deg C.
Front line cooler was at 4 deg C.
Hot holding: chicken, beef, beyond meat = 65-70 deg C; beans and rice = 60-65 deg C.
tortilla shells = 60 deg C
Cold holding: avocado, sour cream, salsa, veggies = 3-4 deg C
Temperature log was available and up to date.
Both employees on duty have valid Food Safe 1 certification.
No signs of pests noted at time of inspection. Ensure to have pest control monitoring.
General sanitation was satisfactory except for some details noted above.
Washrooms were clean and provided with sanitary supplies.
