209 - Food not protected from contamination [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): Staff stated that Clorox bottle is used for sanitizing food contact surfaces. The concentration of premade bleach was recorded above 200ppm. Sanitizing food contact surfaces with high concentration of bleach is not recommended as it may result in potential chemical contamination of food when used for storing/handling food in them. Staff prepared fresh sanitizing solution in spray bottle and the concentration of QUATS recorded at 200ppm.
Corrective Action(s): Please take appropriate measures to prevent the risk of food contamination. Do not use sanitizing solution at a concentration that is above the acceptable level and cause chemical food contamination.

Observation: Rodent droppings noted in the corner of bar area. Staff stated that pest control company conducted inspection recently.
Corrective Action(s): - Please remove the rodent droppings from the affected areas and disinfect the area with 1 part bleach to 9 part water solution.
- Regularly clean the affected areas and monitor for new rodent activity.
- Notify your pest control company and implement control measures.

Routine inspection conducted.

Temperature (coolers to be maintained at 4C or less, freezers at -18C or less, hot holding at 60C or above):
- Walk in cooler recorded at 3C
- 2x prep coolers noted at 2C and 4C
- Stainless steel freezer at -11C
- Front bar area: 2 undercounter coolers noted below 4C
- 2x hot holding units with cooked rice recorded at 65C and 66C

Storage:
- All food items were stored at least 6" off the floor.
- All food products were found either in original packaging or covered inside coolers.
- Storage area was well-organized. Good.
- Chemicals and cleaners were stored separate from food preparation areas.

Sanitation & Maintenance:
- All handwash stations were adequately stocked with hot/cold running water, liquid soap, and single-use paper towels.
- Low temp mechanical dishwasher checked and 50ppm chlorine residual recorded during rinse cycle.
- 2 compartment dishwashing sink available and QUATS dispenser mounted in the dishwashing area.
- 2 compartment prep sink available and used as designated.
- Ice machine maintained in good sanitary condition. Ice bins in the bar area were properly covered.
- Ventilation hood had no build up.
- General sanitation of the facility was excellent.

Pest Management:
- Professional pest control company conducts routine checks.
- Mechanical traps were present throughout the facility.

Administrative:
- Staff has valid FoodSafe Level 1 certificate (Exp Nov 30, 2026).
- Permit posted at the front.
