Observation (CORRECTED DURING INSPECTION): 1) Dough mixer requires cleaning. Picture taken. To be washed/sanitized today.
2) Inside ice machine requires cleaning. Picture taken. To be washed/sanitized today.
Corrective Action(s): Ensure to have kitchen equipment washed/sanitized on a more regular basis. Dough mixer should be washed/sanitized after each use.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): Sanitizer bottle in kitchen had >>200pm chlorine measured. Solution was diluted to 200ppm by chef at this time.
Corrective Action(s): Ensure to have 1/2 tsp of chlorine mixed into 1L of water to prepare the correct concentration every time.

Observation: 1) Numerous uncovered foods observed in dry storage area and few in cooler/freezer in servery area.
2) Three opened cans of food observed in the domestic cooler.
3) Raw chicken stored above cooked food in the walk-in cooler.
Corrective Action(s): Ensure all foods are properly contained in and covered with food grade materials at all times. Especially the ones in the dry storage room must be stored in pest proof containers. Transfer all opened can foods to food grade materials to prevent chemicals leaching into food. All raw meat/seafood must be stored below and away from ready to eat foods (i.e. cooked foods, vegetables).

304 - Premises not free of pests [s. 26(a)]
Observation: 1) Rodent droppings observed in the dry storage room. Pictures taken.
2) Fruit flies and large flies observed in the dining as well as kitchen.
Corrective Action(s): 1) Ensure to monitor and remove droppings EVERY MORNING.
2) Ensure to consult with pest control company regarding the issues - install devices (i.e. UV lamp, roller - only above non-food prep areas).

Observation: Foods in the dry storage room, where rodent droppings are apparent are not covered. Food debris also observed on floor of this room and throughout the kitchen.
Corrective Action(s): Ensure to remove all food debris from floors/shelves/counter surfaces after each shift to avoid feeding pest in the facility.

Observation: MAJOR CLEANING IS REQUIRED. Repeated violation. Correction Order issued
Corrective Action(s): Ensure to have the following areas cleaned:
- All floors throughout the kitchen / underneath and behind all kitchen equipment.
- All sides of kitchen equipment
- All shelves and handles of coolers/freezers
- Pull out everything in the dry storage room and reorganize

Routine inspection conducted:

- Handwash stations adequately supplied with liquid soap, paper towels and hot/cold running water.
- Coolers operating at/below required temperature of 4'C; Freezers operating at/below required temperature of -18'C.
- High temperature dishwasher achieved 73.2'C at the plate level after final rinse.
- Professional pest control company contracted for monthly visits. Report not available on site.
NOTE: Ensure to have the pest control report available for the follow-up inspection.

General maintenance and sanitation of the facility require a MAJOR IMPROVEMENT. Correction Order issued. As per progressive enforcement, failure to comply with this Health Order will result in further enforcement action (i.e. issuance of Tickets - one for each violation and one for not complying with Health Order). Follow-up inspection will be conducted on/after Thursday, November 14, 2019.
