Observation (CORRECTED DURING INSPECTION): Left over soup bases (two large pots) from last day of operation (November 15) still on site. Internal temperature measured at 50-51C. Soup bases discarded due to time and temperature abuse.

Observation: Clean up all rodent droppings, including:
- Behind the white stand alone freezer next to the hot water tank.
- Around the hot water tank.
- Under the shelf next to the hot water tank.
- Next to the wooden drawer (utensil storage).
Corrective Action(s): Rodent droppings release smell and pheromone which can attract rodents. The operator initiated cleaning process at this time.

Adequate handwashing stations not available for employees [s. 21(4)]
Observation: 1. (Repeated violation) Hand washing station near the dishwasher was blocked by a metal shelf. The plumbing was also blocked as water was not draining. Water was leaking from the pipe below. Single use paper towels were not available at this station.
2. (Repeated violation) Hand washing station next to the ramen station was being used for food preparation (a bucket of cooked meat being cooled down by running water). Food removed from this hand washing station.
Correction: 1. Service the hand sink so that water drains without any leakage. Replenish single use paper towels.

Pest proof containers are used for dry storage area.
Hand washing stations are fully equipped with hot and cold running water, liquid soap and paper towels.
Hand sink's leaking and blockage issues has been resolved.
Weekly pest control service in place.
Updated Sanitation Plan received and reviewed.
Pest control reports from September, October and November has been received and reviewed.
Proof of contract from the pest control service received and reviewed.

The facility is to clean and sanitize all rodent droppings identified in this report prior to resuming its operation.
