- Temperature of coolers and freezers were adequate.
- Discussed the maintaining of broth above 60 degrees C. Please use thermometer to confirm that broth is heated to a minimum of 74 degrees C when reheating at maintained above 60 degrees at all times.
- Hand sinks were equipped with liquid soap and paper towels.
- Bleach solution was present in spray bottle.
** Some deep cleaning required in hard-to-reach areas along walls under counters (noted fallen items in front serving area).
Dishwasher - Final rinse temperature was 72 degrees C at the plate.
