Observation (CORRECTED DURING INSPECTION): Knives stored in make shift knife holder soiled with food debris. Unable to adequately clean and sanitize on regular basis.
Corrective Action(s): Store all knives and other utensils in a sanitary manner. Store in clean container, tray, or magnetic holder. Reminder not to line containers and trays with cloth. Clean and sanitize these items on a regular basis.

Observation: Alterations made to premise without approval from the health department. Walk in cooler installed in area that was once the dry storage area. Staff washroom changed into dry storage area.
Corrective Action(s): Provide updated floor plans by September 28, 2017.

Note:
Monitor and record temperatures of all coolers, freezers, hot holding, and final rinse temperature of the high temperature dishwasher. This was discussed at the last inspection.
Last pest control services inspection was on August 17, 2017. Technician did not note any pest activity. Reminder to keep rear door to premise closed. Clean on a regular basis especially all hard to reach area. Leave monitoring traps alone.
