Follow-up inspection:
- Margarine was hot held at 65C.
- Draw cooler measured with an ambient air temperature of 3C.
- General sanitation in the walk-in cooler had improved.
- Cockroach was being monitored. Ensure glue traps are changed when cockroaches are found on the trap.
