Observation (CORRECTED DURING INSPECTION): Food debris from previous day's use observed on backside and beneath blade guard of deli slicer. Staff also unsure on how to dismantle back portion of slicer.
Corrective Action(s): Directed staff to wash and sanitize removeable parts of slicer, and clean in place for the remainder. Reviewed proper deli slicer dismantling procedures with staff --> food contact surfaces must be cleaned and sanitized once every 4 hours if in continuous use, or after each use if less than 4 hours.
