Observation (CORRECTED DURING INSPECTION): Small bar cooler in barista area - air and food temperature is at 65F.
Corrective Action(s): Move higher risk food (dairy, opened almond milk) that has been stored in this cooler for <2 hours to 2 door cooler. Discard any higher risk food that has been at 65F (>40F) for >2 hours. Note: Only store lower risk food (food that does not need to be refrigerated) in this cooler unless it can keep food at 40F (4C) or colder.

Observation: White substance, possibly mould, on lid of ice machine.
Corrective Action(s): Add cleaning and sanitizing ice machine, including lid and ceiling of ice machine, to your cleaning schedule. This is to protect ice from contamination.

Observation: Some food /dirt noted on floor in hard to reach areas. Cupboard behind barista station requires cleaning. Walls and ceiling in main kitchen area discoloured and some grease noted on walls.
Corrective Action(s): Deep clean kitchen, including floor, walls, and ceiling. Walls and ceiling to be light in color. Clean cupboards. Follow a routine cleaning schedule.

Comments

Coolers - walk in, coolers in main kitchen, 2 door pop cooler, and 2 door undercounter milk cooler - are at 4C/40F or colder.
Small milk bar cooler - see above.
Bakery display cooler - verify that there are no higher risk foods stored in this cooler.
Hot holding soup is at 60C+ - good.
Keep daily temperature records.
Management on site has Food Safe level 1.
Hand washing sink in main kitchen, barista area, and staff washrooms have hot/cold water, liquid soap, and paper towels.
**Re-install paper towels dispenser in barista staff washroom.
Quats sanitizer (200ppm) used to sanitize wiping cloths and counters etc.
Ice machine - see above.
Commercial dishwasher has a final hot water sanitizing rinse (82C measured on the final rinse water gauge and about 71C measured inside of the machine).
Cleaning - see above.
Operator advised re proposed mechanical exhaust. ** Obtain all required approvals.
Pest control - no obvious signs of new activity. Checked several monitoring devices. Back kitchen door is sealed at bottom. Some droppings noted behind ice machine.
