General Observations:
Upright "True" freezer temperature was -20 degC; Double door "True" cooler temperature was 4 degC; Single door "True" cooler temperature was 1 degC; bread freezer in dry storage closet was -18 degC.
Hand sink was fully equipped
200ppm quats was available for use (D-4055) in a spray bottle. USE THE APPROPRIATE TEST STRIPS TO MEASURE THE SOLUTION CONCENTRATION (QUATS NOT CHLORINE).
Foods were not being hot held at the time of the inspection
Dishwasher rinse was 76 degC at the plate level
Temperature logs were being maintained
A pest control company was on contract.
Chef has FS Level 1 certification
