Corrective Action(s): Discard all empty boxes and remove any items not required for the premises. Maintain sanitary conditions in the back area especially hard to reach areas

Observation: Hot plate for reheating of soups is broken and not available for use at the time of inspection
Corrective Action(s): - Replace hot plate and ensure that the soups are reheated prior to hot holding in the steam hot holding units
- Ensure that soups are reheated from 4C to 74C within 2 hours and are then hot held at 60C in the designed hot holding units. Hot holding units are not meant for reheating foods

Comments

- All handsinks are supplied with hot and cold running water, soap and paper towel
- All coolers - sandwich prep cooler, upright storage cooler, under counter cooler, milk cooler and display cooler are maintained at less than 4C
- Storage freezer is funational
- Hot holding unit is greater than 60C
- SAnitizer solution in a bucket is measured at 200ppm chlorine concentration
- No evidence of pest activity at the time of inspection
- High temperature is measured at 71C during final rinse cycle at the dish surface. NOTE: Temperature at the dish surface reached the right temperature after few cycles. Ensure that you run the dishwasher few times and check the temperature before running dishes
- Foodsafe certification is verified
