Renovations proposed to the laundry room wall. No proposed changes to the kitchen layout.
Recommend additional prep sink - plans would need to be submitted for any change to the kitchen layout or addition of sinks.
Coolers are at <4 C.
Chlorine is available to sanitize utensils and food contact surfaces. Clean and sanitize every 4 hours or after each use (eg buckets).
Glassware washer has an iodine sanitizing rinse (12.5ppm detected - good).
Hand washing stations with liquid soap and paper towels are available in the kitchen and in the front server area.
Reviewed reheating/hot holding procedures. Reheat soup and peas to 74 C on stove and verify temperature. Pre-heat hot holding unit and hold above 60C.
Verify food temperatures with metal stem probe thermometer.
Monitoring for pests - reviewed procedures.
