Observation: Internal temp of cooked chicken in broken 2 door cooler measured at 8.4 oC - foods been there since last night.
Corrective Action(s): All cooked/raw PHF foods ( cooked chicken, cheese, tempura ...) are to be discarded, Remove all veg (ie: sliced yam , sprouts , avocado... ) and move to other working cooler.

-Sanitize all dishes by soaking in bleach solution 100 ppm for 2 minutes -let air dry

Comments

Inspection conducted for change of ownership- application form, FSP ,SP and FS Certificate are submitted.
- Hand washing stations are equipped with hot and cold running water, liquid soap, and paper towels
- Coolers (prep, stand-ups) are ≤ 4°C- with exception of noted unit
- Freezers (stand-ups, chest) are ≤ -18°C
- Hot holding units (miso soup, rice) are ≥ 60°C
- 100 ppm bleach sanitizer is available in spray bottles and buckets for wiping rags
- Dry storage areas are maintained
- Ice machine is maintained. Ice scoop is stored properly.

** Obtain a waterproof probe thermometer with min/max function and heat shield. Measure the temperature of the dishwasher at least once daily.
