Observation (CORRECTED DURING INSPECTION): - Pan washer is not in use and is inaccessible. Equipment blocked with large unused bakery equipment and boxes.
Corrective Action(s): - Pan washer must be accessible and used per Sanitation Plan. Large items that cannot fit in the 3-compartment sink (e.g. baking pans, dough mixer bowl) must be washed and sanitized in the pot washer.
- Minimum Wash and Rinse temperatures must be achieved per unit data plate. Minimum 71C must be achieved at plate surface (max/ min thermometer).
- ALL bakery items must be manually washed and sanitized until pan washer is accessible for use. Manual warewashing and sanitizing procedures reviewed.
**Provide adequate racks at 3-compartment sink and pan washer area to facilitate air drying after equipment have been washed and sanitized.**

Comments

- Handsinks are accessible and provided with hot and cold water, liquid soap and papertowels.
- Walk-In Cooler: 1C
- Walk-In Freezer: -18C
- Coolers are maintaining acceptable temperatures (≤4C).
- Hot Holding Display Unit is maintaining an acceptable temperature (>60C).
**Replace thermometer in hot holding display unit. Thermometer is not displaying correct temperature.**
- 200 ppm QUATS available in sanitizer spray bottles.
- Manual 3-Compartment Sink Warewashing and Sanitizing procedures reviewed with Department Head. 200 ppm QUATS used for sanitizing food equipment.
**More racks required so that washed and sanitized food equipment and utensils can properly air dry. Existing drainboard space is inadequate to accommodate all the items to properly air dry. - Assistant Store Manager reports that no pest activity have been observed to date.
- Regular pest control service provided by a pest control service company.
- Follow all recommendations provided by a pest control service company.
- Ensure all areas of the premises are accessible for pest control service.

**Pan Washer is not in an ideal location (far away from actual 3-compartment sink and dishwashing area). Should future inspections identify that the location of the pan washer is contributing to sanitation and/ or food safety deficiencies, unit may have to be relocated so that it is operationally functional for the operation.**

**Provide hooks for freezer jackets. Freezer jackets are not to be stored food preparation surfaces and/ or shelving intended for food storage.**
