Observation (CORRECTED DURING INSPECTION): Salami/sausage roll thawing in water at 16C for unknown period of time. Cold, potentially hazard food must be held at <4C to inhibit the growth of pathogens and their toxins.

Observation (CORRECTED DURING INSPECTION): Cleaner spray used, but no sanitizer on food contact surfaces. Food contact surfaces must be cleaned with detergent and warm water, wiped clean with sanitizer. Sanitizer achieves the required reduction in pathogens.
Corrective Action(s): Operator filled spray bottle with chlorine bleach solution. Solution concentration was 200ppm. Chlorine bleach should be 100ppm (½ tsp in 1L water) *At 200ppm, rinsing is required after sanitizing
