General - handwashing station stocked with soap, paper towels and hot and cold running water - handwashing station clear of debris - good - sanitizer measured 100ppm chlorine in sanibucket and in sanitizer compartment of three compartment sink - discussed washing of in-use utensils with staff - staff stated in-use utensils were washed, rinsed and sanitized every four hours - vent hood relatively free of grease; next service is later this month - monitor for pests - FOODSAFE requirements met - ensure back area does not become too cluttered as that will hinder cleaning - gloves are single-use ONLY; do not take them off in the middle of dredging and leave them in the batter Temperatures: - pop cooler: 2C - counter top cooler: 0C - chicken under counter cooler: 3-4C throughout - fridge/freezer (chicken/fries): 4C/-15C - chest freezer (fries): -20C - fridge/freezer (empty/fries): 4C/-17C - upright white freezer: not working, no foods stored inside - new stainless steel freezer: -18C - staff fridge/freezer: 4C/-15C
