Observation (CORRECTED DURING INSPECTION): Front handwashing station has a mesh tray in the sink and is missing a liquid soap. Operator has added the soap at the beginning of the inspection and removed the mesh tray. REPEAT VIOLATION.
Corrective Action(s): Ensure to have this handwashing station properly equipped at all times, as this sink is the only handwashing sink designated for the staff working at the pizza station.

Observation: Bags of flour/sugar stored on a wooden pallet under a prep table.
Corrective Action(s): Ensure to have the opened bags of flour/sugar transferred to a food grade/pest proof containers as agreed at this time.

304 - Premises not free of pests [s. 26(a)]
Observation: Rodent droppings were observed from floors in the dishwashing/back prep and storage area. Sticky traps in place.
Corrective Action(s): Ensure to have all droppings removed and affected areas sanitized.

The following must be done every morning:
- Check floors for droppings, if observed immediately remove them and sanitize the affected area
- Sanitize all prep surfaces using 100-200ppm chlorine solution available on site

Contact the professional pest control company for a full site inspection. Correction Order issued at this time.

Observation: 1) Door sweep under the back entrance door is missing. REPEAT VIOLATION.
2) Food debris/oil build-up observed on prep tables/floors throughout the facility.
Corrective Action(s): Ensure to have the door sweep installed. All oil/food debris must be removed from prep tables/floors at the end of each day to prevent attracting pest into the facility.

Observation: Major cleaning is required. Areas shown to the operator at this time.
Corrective Action(s): Ensure to have all floors cleaned. Remove all droppings, food debris and oil builid-up from prep/storage surfaces and floors on a daily basis. Correction Order issued at this time.

- Handwashing station at the back adequately supplied with liquid soap, paper towels and hot/cold running water.
- Coolers operating at 4'C; Freezers operating at -18'C.
- 200ppm chlorine solution available in a labelled spray bottle.
- Washroom handsinks satisfactory.

Correction Order issued at this time. As per progressive enforcement, failure to comply with this Health Order will result in further enforcement action.
