Observation: Line prep cooler 18C using probe thermometer
Correction: Food brought from walk in cooler (less than 4C) transferred to line prep cooler at 6am. Currently 12pm. All potentially hazardous foods discarded by operator. Line cooler not working. Have serviced to maintain at food less than 4C.
Comments

Prep cooler temperature 6.0C at time of follow up, staff turned cooler down further. Temperature dropped to 4C

Monitor cooler daily multiple times a day (morning and evening) to ensure cooler maintains food less than 4C.
Keep temperature logs of coolers up to date
Use covers over inserts to help keep food cold when not busy
