Observation: *REPEATED VIOLATION*
QUATS sanitizer solution in the small plastic container used for sanitizing step during manual dishwashing was recorded at 0ppm. Staff onsite stated that the solution is changed every 2-3 days. Proper manual dishwashing was discussed during last routine and follow up inspection but not being followed. The container used for sanitizing step is too small to accomodate and adeqautely sanitize all the utensils/dishes/food contact surfaces used for facility operation.
Corrective Action(s): Ensure that all food contact surfaces/utensils/dishes are adequately washed and sanitized. Use 2 compartment sink for manual dishwashing by following proper steps - wash & rinse, sanitize and air dry.
It is recommended to prepare the sanitizing solution fresh every day or as needed and have test strips on site to verify the concentration.

Observation (CORRECTED DURING INSPECTION): Frozen peeled garlic were soaked in a bucket of water and left at room temperature. The internal temperature was recorded at 10.2C and after verification of time-temperature, the bucket was moved to a working cooler at a temperature of 4C or lower.
Corrective Action(s): Follow proper thawing method to prevent the growth of pathogens or toxin production in food:
- Leave the soaked garlic in a cooler overnight at a temperature of 4C or less
- Use cold running water

Routine inspection conducted.

- Temperature of walk in cooler at 2C
- Stainless steel refrigeration unit at 4C
- All freezers at or below -18C
- Front beverage cooler at 10C and only used for storing beverages (no potentially hazardous food observed).
- Handwash station had adequate supply of hot and cold running water, liquid soap and single use paper towels.
- 200ppm QUATS sanitizer spray bottle available.
- 2 compartment dishwashing sink present.

- Food storage practices were satisfactory.
- Mechanical traps present throughout the facility.
- Operating permit was posted at the front.
- Staff has valid FOODSAFE Level 1 or equivalent.
