- Operator has obtained Quats for sanitizing food-contact surfaces, and will no longer be using the Purell alcohol-based sanitizer and disinfectant. Good - ensure Quats sanitizer bottles are available in the back and front kitchen and bar. No mixing required - solution comes ready-to-use.
- Dishwasher registered 100 ppm chlorine residual, detected at the dish surface after final rinse. Good. Test strips available for monitoring.
- Deep cleaning of prep coolers, around cooking equipment, ventilation canopy, dry storage areas, around the dishwashing area, and walls has been completed.
- Dry storage area organized. No opened bags of dry ingredients were stored on the floor. All dry ingredients stored properly in containers with secure lids.
- Back door was closed at time of inspection - good. |
