Routine inspection conducted.

Temperature (coolers to be maintained at 4C or less, freezers at -18C or less, hot holding at 60C or above):
- Temperature of coolers including walk in cooler recorded at or below 4C
- Walk in freezer and stand up freezer recorded below -18C
- No hot holding was conducted at the time of inspection. However, empty hot holding units were observed being pre-heated. Good.
- Temperature logs were maintained.

Storage:
- All food items were stored at least 6" off the floor.
- All food products were found either in original packaging or covered inside coolers.
- Storage area was well-organized.
- Chemicals and cleaners were stored separate from food preparation areas.

Sanitation & Maintenance:
- Hand wash stations were adequately stocked with hot/cold running water, liquid soap, and single-use paper towels.
- Sanitizer pails available and the concentration of QUATS noted at 200ppm.
- Sanitizer dispenser releases 200 ppm QUATS at 3-compartment sink.
- Low temp mechanical dishwasher available. 50ppm chlorine residual recorded during rinse cycle.
- Sanitation logs were maintained. Chlorine & QUATS test strips available onsite.
- Kitchen hood, equipment and dishes maintained in good sanitary condition.

Pest Management:
- Professional pest control company conducts routine checks.
- No visible signs of pest activity observed at the time of inspection.
- Mechanical traps were present throughout the facility.

Administrative:
- Operating permit was posted in a conspicuous location.
