Observation (CORRECTED DURING INSPECTION): #3 cooler under the second grill storing cold foods at greater than 4 deg. C. Internal temperature of ham measured 7.8 deg. C using probe thermometer.

Corrective Action:
-Repair/adjust cooler unit so foods are maintained at 4 deg. C or less.
-In the meantime, move all foods in cooler unit into a working cooler that can store food at 4 deg. C or less.

2) Replace lgiht bulb in freezer.

-Undercounter 2-door cooler (left side of kitchen): < 4 deg. C
-Undercounter 2-door cooler (containing cheese): < 4 deg. C
-Upright 2-door freezer: -15 deg. C
-Upright 3-door unit: 0 deg. C
-Walk-in cooler: 1 deg. C
-Walk-in freezer: -12 deg.C
-Soup hot-holding unit: 67 deg. C
-Beverage display cooler: 1 deg. C
-Dessert/ice-cream storage unit: -11 deg. C
-Two ice machines available. Both are clean and well-maintained.
-Quats sanitizer concentration at dispenser is 200ppm.
-Lo-temp dishwasher chlorine sanitizer concentration at plate surface is 50ppm.
-Overall sanitation of premises is satisfactory
-No signs of pest activity. Orkin pest control company comes in once a month. Operator provided reports for May and April 2020.

*Noted that two undercounter cooler unit doors were not fully closed. Ensure that cooler unit doors are fully closed at all times to maintain foods at 4 deg. C or less.

-Covid-19 Safety Plan was discussed with operator. Safety Plan is posted on site. Regularly check WorkSafe BC website for updates. Use digital, touchless menus for customers. Use hard-copy menus as last resort to minimize high touch surfaces.
