- Temperature Control: No concerns noted this date. Monitoring is required to be conducted. Internal temperature monitoring of cooked food items is to be conducted prior to service. Probe style temperature gauge is noted on site.
- Mechanical Dishwasher: High Temp: Ok.
- Ensure all food contact surfaces/implements are being washed and disinfected after use or on a timely manner. All items are to be air dried.
- Wiping cloth storage: Reviewed - too strong. Test bucket refilled.
- Use 100ppm bleach - 30 ml (2 tablespoons) of 5% unscented bleach in 4.5 litres (1 gallon) of water. Change sanitizing solutions in sinks and buckets every couple of hours. Change sanitizing solutions in bottles daily. Use test strips to measure the concentration of sanitizer.
- Food Storage: Limit the amount of perishable food items being stored at room temperature. (ie: eggs - breakfast) Small quantities - quick use required.
- Sanitary Facilities: Ensure food is kept protected next to handsink. Keep area clear of obstacles.
- Chemical storage: Ok.
- Staff illness/hygiene: Discussed
- Sanitation: Ensure daily cleaning of walls behind grills to prevent grease build up.
- Pest Control: Monitoring is required to be conducted. No signs noted this date.
