Observation (CORRECTED DURING INSPECTION): 1) Minced garlic (used for garlic na'an) was left at room temperature. Chef indicated that he had just brought it out to use on the na'an (garlic na'an).
2) Balls of dough for na'an/roti was on the metal tray in the stacking rack at room temperature. Chef indicated it was still cooling.
Corrective Action(s): 1) Only bring enough minced garlic out to use within a 2 hour period. As discussed, garlic that is mixed with oil and kept at room temperature for too long is at risk of foodborne pathogen production (such as botulism).
2) Ensure that all dough, once prepped, is placed in your coolers. Cooling must be from 60 deg C --> 20 deg C within 2 hours, and 20 deg C--> 4 deg C within 4 hours. Chef moved dough into cooler.

Observation (CORRECTED DURING INSPECTION): 1) Chicken skewers in walk in cooler were uncovered and in direct contact with the cooler racks (meat touching the racks).
2) Boxes of food in walk in cooler/freezer stored on floor.
Corrective Action(s): Cover chicken skewers fully. Ensure all foods are stored off the floor > 6 inches

Observation: New large dough mixer machine (for roti/na'an) was added to premises without receiving approval first.
Corrective Action(s): Ensure the bowl properly fits into the dishwasher and your 3 compartment sink (demonstrated during inspection). Also, when mixer is in use, ensure to clean up any flour spills immediately as the mixer is placed near the exterior door. Flour (and any food spillage) may attract pests.
