Routine inspection conducted at the food facility and the following observations were made:

Temperature:
- All temperatures meet health requirements.
- Walk-in and reach in coolers were maintained at 4C or less.
- Walk-in freezers maintained at -18C or less.
- Cooked chickens were hot held above 60C at time of inspection.
- Temperature logs were found up to date.

Hygiene and Sanitizing:
- Each room has hand wash station that was adequately stocked with hot/cold running water, liquid soap, and single-use paper towels in front service area.
- Sanitizer pails available at each work stations and the concentration of QUATS noted at 200ppm.
- Sanitizer dispenser releases 200 ppm QUATS at 3-compartment sink.
- Utensils were found in sanitary condition.
- Sanitizer logs were maintained and found up-to-date.

Meat processing/storage:
- Room for meat processing/cutting was maintained between 40-50F.
- Separate meat slicers/grinders designated for different meat species.
**Clean in place machines to be cleaned and sanitized every 4 hours if used throughout the day.
- Separate room used for handling raw chicken.
- Chickens held for maximum 2hrs in hot holding unit, then blast cooled.
- Food was stored 6" off the floor.
- All products were properly covered to prevent contamination.

Pest Management:
- Professional pest control company conducts routine checks.
- No visible signs of pest activity observed at the time of inspection.
