Observation (CORRECTED DURING INSPECTION): Internal temperature of the following foods stored in large buckets was measured and found above 4C:
- 2 buckets of butter chicken sauce at 10.5C and 10.6C
- 3 buckets of manchurian gravy at 9.0C, 12.9C and 12.8C
As per the staff, the food was prepared last night and kept in the cooler overnight (more than 2 hours). Kitchen manager stated that the staff may not have cooled the food prior to storing it in walk-in cooler resulting in high internal temperature. Staff voluntarily discarded abovementioned 5 buckets of food.
Corrective Action(s): Ensure that the hot potentially hazardous food is properly cooled prior to storing it in walk-in cooler (60C to 20C within 2 hours and 20C to 4C within 4 hours) to prevent growth of bacteria or toxin production.

Observation: Health Permit was not posted. Staff couldn't find it during inspection.

Observation: Mouse droppings observed in the following areas:
- Behind stand-up freezer
- Dry storage room
- Back area near staff washroom.
Corrective Action(s): Remove the mouse droppings and disinfect the abovementioned areas with 1 part bleach to 9 part water solution. Use proper PPE during cleaning. Discuss the issue with your pest control company to implement control measures.

Observation: 1. Grease and dirt build-up observed on vents and ceiling tiles.
2. Chest freezer had thick ice build up.
3. Build up of dirt and food debris observed behind cooking line.
Corrective Action(s): Clean the above mentioned areas and remove any debris. Ensure that the facility is maintained in good sanitary condition.

Comments

Routine inspection at the food facility. Improvement noted in terms of general maintenance and sanitation of the facility.

Observations:
- Temperature of all the coolers noted below 4C.
- Freezer was maintained at -7C.
- Handwash sinks available and had adequate supply of hot and cold running water, liquid soap and single use paper towels.
- QUATS sanitizer bottle was measured at 200ppm.
- High temp mechanical dishwasher reached 72C on dish surface during rinse cycle.
- Prep sink and 2 compartment sink maintained in sanitary condition.
- Old worn out prep board (sandwich cooler) has been replaced with new board.
- Pest proof storage bins were used in dry storage area.
- Pest Control Company conducts routine checks. Mechanical traps were observed throughout the facility.
- Staff has valid FOODSAFE Level 1 Certificate.
- 1 stand-up cooler (previously located in dry storage room), 1 bar under counter cooler and 1 chest freezer have been removed from the facility.
- New ice machine was in use and found in good sanitary condition.
