*In the main kitchen, staff were breaking up gelatin from cooled (and cooked) pork at room temperature. Education provided to ensure that only small amounts are taken out of the cooler at a time so that they do not stay at danger zone for too long*
**In the back kitchen, several machinery used for slicing, mincing and cutting meat products. Staff provided adequate explanation on how long the process is for each machinery and the way they are cleaned and sanitized. Bleach sanitizer available in the back area**
***Noted cardboard boxes lined on the floor to facilitate easier cleaning. Ensure to removed them and discard them. Education provided to ensure they are not used especially around cooking equipment***
