301 - Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation (CORRECTED DURING INSPECTION): Chemical dishwasher had no detectable chlorine disinfectant at the time of inspection. Chlorine is only dispensed once the bleach container is in a raised position. When bleach container is raised, the bleach flow is uncontrolled, resulting in excessive bleach concentration.
Corrective Action(s): Dishwasher must be served or replaced and ensure a proper concentration of bleach is delivered. Bleach at 50ppm is required for proper sanitizing of equipment and utensils. Excessive bleach concentration may be toxic for human health. All equipment and utensils must be properly washed and sanitized. Bleach was added to the sanitizer pail and was tested at 50ppm at the time of inspection. All equipment and utensils must be washed and sanitized properly. Operator began process of rewashing and sanitizing equipment and utensils at the time of inspection.

Observation: 1) One bag of onions were stored on the floor in the walk-in cooler and one bag of onions in the dry storage area was stored on the floor in direct contact with a mop.
2) Scoops were stored in broth containers, in direct contact with the handle
Corrective Action(s): 1) All foods must be stored off the floor and protected from contamination. Items were relocated at the time of inspection.
2) Ensure all scoops are stored in a sanitary manner - handle may result in potential cross contamination. Scoops were relocated at the time of inspection.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: Chemical dishwasher is unable to properly deliver bleach disinfectant. Bleach is only delivered once the bleach bottle is in a raised position. If the bottle is too high, bleach is delivered uncontrolled. If the bottle is too low, bleach is not delivered in sufficient quantities or not at all.
Corrective Action(s): Chemical dishwasher must be able to deliver a constant level of bleach to ensure proper disinfection of equipment and utensils. Public Health Act Correction Order has been issued to the facility. Failure to comply with the conditions of the Order will result in the issuance of a violation ticket.

Comments

-Walk-in cooler was at 4C.
-Prep coolers were at 4C (top and bottom).
-Glass door cooler was at 4C.
-Sprouts stored in an ice/water mixture.
-Under counter freezer was at -18C.
-Upright freezer was at -7C.
-Front chest freezer was at -20C.
-Hot holding was greater than 60C.
-Chicken cooked on the grill was greater than 74C.
-Hot potentially hazardous foods were probed at around 4C. Operator has three ice wands and smaller containers for cooling.
-Handwash stations supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Quats sanitizer spray bottles labelled and tested at 200ppm. Sanitizer spray bottles were located in each food preparation area.
-Meat slicer was found to be clean and sanitary.
-Ice machine was found to be clean and well maintained.
-General sanitation satisfactory at the time of inspection. Some additional attention required under the frying area.
-No signs of pests noted at the time of inspection.
-Washroom clean and well maintained.
-Operator FoodSafe Level 1 valid until March 6, 2023.
*Public Health Act Correction Order has been issued to the facility for contravention of Section 16(b) of the Food Premises Regulation BC Reg 210/99. Failure to comply with the conditions of the Order will result in the issuance of a violation ticket.
