HAZARD RATING FOR YOUR FACILITY: Low (≤15) Total Score = 11
Critical Hazards: Total Number: 1
205 - Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)]
Observation (CORRECTED DURING INSPECTION): Sea Salt Cream noted at 9 C placed in larger bowl with melted ice.
Corrective Action(s): Ensure all potentially hazardous foods are maintained at or below 4 C in a mechanical cooler unit. Bowl of ice is not sufficient for the length of time the cream sits out for the day.
Place cream product in an insert in the prep cooler and maintain at or below 4 C, if above 4 C for more than 4 hours discard.
Violation Score: 5

Non-Critical Hazards: Total Number: 2
306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Required cleaning:
1. Cooling fan for staff - covered in thick dust debris
2. Plastic wrap covering shelves in 2 door standing cooler - covered in splatter and spilled liquids
Corrective Action(s): Ensure all the above areas are cleaned regularly to prevent build up of food debris and dust.
Correction date: 3 days
Violation Score: 3

307 - Equipment/utensils/food contact surfaces are not of suitable design/material [s. 16; s. 19]
Observation: 1. Exposed wood next to front handsink - wood expanded / water damaged
2. Wire shelving in 2 door standing cooler covered in plastic wrap - appears splattered and dirty
3. Garbage bag covering exterior of ice machine (appears clean)
Corrective Action(s): Ensure all materials in premises are smooth, durable, easy to clean and non-absorbent.
1.Raw wood does not meet above standards. Plastic cover has broke off edge of counter exposing the wood leading to water damage due to proximity to handsink. Cover /seal all exposed wood.
2. Plastic wrap is a temporary material used to cover food - not to be used as cover or liner over shelving. Remove from cooler. Shelving can be covered (if needed) by removable hard plastic liner and or trays or equivalent that can be wiped clean when they become dirty.
3. Garbage bag as per above comments is not intended to be used as protective cover. If spilling and splashing is an issue ensure more regular cleaning opposed to liners and covers with temporary materials. Remove.
Correction date: 3 days
Violation Score: 3
