Observation (CORRECTED DURING INSPECTION): Pizza toppings inside prep cooler were at an internal temperature of 7C (bottom) and 6C (top).
corrective Action: Toppings transferred immediately into walk-in cooler. All potentially hazardous foods must be at a temperature of 4C or less when cold-held to prevent growth of harmful bacteria and/or production of toxins.

Observation (CORRECTED DURING INSPECTION): Repeat violation. Pizza slices inside hot-holding cabinet at 55C. Slices were cooked 1 1/2 hours ago.
Corrective Action: Pizza was reheated to an internal temperature of 76C and was added back into the hot-holding cabinet at an ambient temperature of 70C. Check your pizza slices with a cleaned and sanitized probe thermometer and ensure it is hot-held at 60C or greater at all times.

Observation: Shelf underneath dough mixer has been covered, but with exposed wood.
Corrective Action: All shelving must be smooth, durable, and impervious to moisture. Either cover or paint the shelf with a waterproof, non-toxic finish or replace with a shelf that meets requirements above.

Observation: Pizza prep cooler at an ambient temperature of 7C (bottom) and 6C (top).
Corrective Action: Repair or adjust the cooler so that it can consistently maintain 4C or less. Do not use the cooler until the cooler has been verified to cold-hold at 4C or less by the district or covering Environmental Health Officer of Fraser Health.

Comments

Routine inspection conducted. Premise is generally maintained in very good sanitary condition. The following was noted.

1. Temperatures
-Walk-in cooler at 1C
-Chest freezer unit at -19C
-Hot-holding unit at 70C (after adjustment)
-Cooler and hot-holding units equipped with thermometers

2. Hygiene and Sanitizing
-Hand wash stations lll kitchen and restrooms adequately stocked with hot/cold running water, liquid soap and single-use paper towels.
-100 ppm chlorine residual sanitizing pail available for sanitizing food contact surfaces.
-3-compartment sink available with chain plugs, drain braid, and drain rack.
-Dough hook, dough mixing bowl, can opener, knives, butting boards, maintained in good sanitary condition.
-Shelving generally well maintained
-soda fountain nozzles and drain recently cleaned and sanitized.

3. Storage
-Food products elevated 6" off the floor. NOTE: Please ensure pizza boxed are always stored securely off the floor.
-Generally, toppings stored in containers with lids.
-Chemicals stored separately form food preparation areas under two-compartment sink.
-Mop sink well maintained. Mop bucket stationed inside mop sink with a plastic barricade up-front.

4. Pests
-No evidence of recent, visible pest activity at time of inspection. Premise maintained in good condition without clutter.

5. Administrative
-Baord of directors has changed to operator holding valid FoodSafe 1 certificate.
-Food safety plan and sanitation plan thoroughly reviewed and accepted.
-Temperature log sheet provided to operator. Please log down temperatures daily.

6. Corrections from initial inspection
-Paper towel dispenser installed in restroom.
-One ceiling gap was eliminated. The second gap above the water tank has a slight gap - please adjust to lower ceiling tile.
-Wooden piece has been added underneath the back door to reduce the gap. Please reinforce with weatherstripping by January 2, 2020.
