Observation: Partially cooked potatoes were being cooled and stored in the narrow hallway at the back kitchen, near the mop bucket, and in the dry storage room.
Corrective Action(s): Store partially cooked potatoes in a designated area in the kitchen that does not pose potential for contamination.

Observation: Build up of dirt and grease in the following areas:
- underneath the three compartment sink
- dry storage room needs better organization and clear the clutter. There is too much clutter and items not required to operate the restaurant. Ensure that all items are at least 6 inches off the floor to allow for better cleaning of hard to reach areas.
- in and around the fryer station

Observation: The upright cooler adjacent to the deep fryer was not functioning, at 24C. The operator informed that it will be serviced by next week.
Corrective Action(s): Fix or replace the non functioning cooler. Do not store any food items inside and provide invoice after the cooler has been fixed to the health inspector.

- Surface sanitizer available in bucket with presoaked wipes at 100 ppm chlorine solution.
- Dry storage area is good.
- No signs of pest activity.
Note: Your ventilation hood is overdue for maintenance and cleaning (April 2017). Please follow the cleaning schedule posted on the hood.
Note: The operator informed that when there is heavy rain, there is pooling of water near the back door. Recommend installing door seals to prevent accumulation of rain water.
