Observation:
Lip of ice machine has mildew growth.
Corrective Action(s):
Discard current ice in machine and in ice well. Clean and sanitize inside of ice machine as per the manufacturer's instructions.

Observation (CORRECTED DURING INSPECTION):
Concentration of QUAT sanitizer in bucket and spray bottle = 100 ppm.
Corrective Action(s):
Immediately replace sanitizer in bucket and spray bottle. Ensure to replace sanitizer frequently and use test strips to check that the concentration of the sanitizer is maintained at 200 ppm.

Observation:
No paper towels available at hand washing station near espresso machine/before entering back area.
Operator informed that the batteries for the automatic dispenser need to be replaced.
Corrective Action(s):
Place paper towels at the hand washing station until the batteries for the dispenser are not replaced.
Replace batteries for the paper towel dispenser and ensure paper towel roll is available in the dispenser.

Routine Inspection:
- Hand sink in front area fully equipped with liquid soap, paper towels and hot/cold running water.
- Concentration of QUAT sanitizer at dispenser = 200 ppm.
- All temperatures met health requirements:
All coolers maintained at or below 4 degrees Celsius (40 degrees Fahrenheit).
All freezers maintained below -18 degrees Celsius (0 degrees Fahrenheit).
All hot holding (soup, butter chicken) maintained above 60 degrees Celsius (140 degrees Fahrenheit).
- High temperature dishwasher sanitizing with 72.5 degrees Celsius at dish level after final rinse cycle.
- No signs of pest activity at the time of inspection. Pest control in place.
