Notes: - Servery only. No changes to operational procedures. All food storage and preparation is conducted @ Kin Village Kitchen. (Across parking lot - Compass Group) Transported to Kin Court South - hot held - served - leftovers discarded. - Temperature Control: No concerns. Monitoring is required to be conducted. - Mechanical Dishwasher (High Temp) = Ok. - Ensure all items are being cleaned and disinfected after use. All items are to be stored in a sanitary manner. Air drying permitted only - do not use cloth towels. - Wiping cloth storage discussed. Limit the number of cloths being used. Cloths are to be kept completely submerged in the sanitizer buckets. Use 200ppm Quats solution and make as per manufacturer's instructions. Change sanitizing solutions in sinks and buckets every couple of hours. Change sanitizing solutions in bottles daily. Use test strips to measure the concentration of sanitizer.
