Refrigeration measures <4C, with the following exception:
205 → The sandwich prep. cooler temperatures measure 11C on average. Adjust the reefer thermostat down to maintain the food temperatures below 4C. → → → immediately

Freezer temperatures measure <-18C. Dishwasher final rinse residual measures 100 ppm Cl. Wiping cloth sanitizer measures 200 ppm Cl. Spray sanitizer measures 200 ppm Q.
