Comments

-With exception of noted sink all other hand washing stations are equipped with hot and cold running water, liquid soap, and paper towels
- Coolers (walk-in, prep, unde-rcounter, drink) are ≤ 4°C
- Walk-in freezer is ≤ -18°C
- Hot holding units are ≥ 60°C
- High temperature dishwasher at tested at 71oC at plate level
- 200 ppm Quat sanitizer is available in most sanitizer buckets
- Dry storage is maintained
- Ice machine is maintained. Ice scoop is stored properly.
- No signs of pests observed during inspection
-No expired products noted
- General sanitation is very good at time of visit.
-Observed overall good personal hygiene by employees (hair net, clean apron..)
- Permit is posted
**Temp log is on site and up to date. Ensure to keep record of monitoring sanitizer level ( min once daily)
** Some cabinets ( inside) are in bad condition- plan gradual renovation

- Discussed having more FS trained staff in line and in kitchen.
