Observation: It was just observed that a steamer is present to steam/cook lobster tails for the public, when ordered by the public. The cooked lobster tail is meant for the public to immediately consume it. A health operating permit is required for offering such services. This means a yearly health permit must be paid and a health permit posted at the Seafood Dept..
Corrective Action(s): Immediately complete an updated Health Application form to reflect the category change and pay the yearly health permit fees of $75 (multi-facility discount). Post the health permit at in the Seafood Dept when you receive it.

Comments

A routine inspection was completed, the following observations were made:
- Walk-in-cooler and display coolers 1C or colder; walk-in-freezer and display freezers -21C or colder; thermometers present; and temperatures recorded twice a day.
- Hand sinks stocked with liquid soap, paper towels and running hot and cold water. Sinks accessible at all times.
- Quats solution in spray bottles and at 3-comp manual warewashing sink had strength of 200ppm. Test strips present.
- General sanitation level is good.
- Ice machine is clean and absent of mildew.
- Seafood staff clean all equipment and surfaces. Safeway cleaning crew cleans the walls, floors and ceilings.
- No signs of pests. Monthly contract with a professional pest company in place for monitoring purposes.
- All foods stored in food grade containers; covered; date coded; labeled; foods stored 6" off the floor on shelves, racks, or pallets; and foods stored in groups.
- Raw seafood stored separately from cooked seafood in display case.
- No expired foods in use or for sale. FIFO rules being followed.
- Staff present possessed a valid FoodSafe Level 1 certificate. This is good, as the Seafood Dept. requires to always have one staff working that possesses the certificate or an equivalent one, now that we are aware that it steams/cooks lobster tails for the public for immediate consumption.
- All in order.
