Dough mixer has heavy accumulation of grease.

Clean and sanitize the dough mixer. Ensure dough mixer is cleaned and sanitized after every use.

Observation (CORRECTED DURING INSPECTION):
No sanitizer available at the time of inspection.
Corrective Action(s):
Prepare a 100-200 ppm chlorine (bleach) sanitizer solution (1 oz bleach per gallon water). Ensure sanitizer is available at all times of operation to adequately sanitize food contact surfaces.

Reminder, cleaning only removes surface dirt and grease. Sanitizing kills or significantly reduces harmful pathogens.

No paper towels available in paper towel dispenser at front hand sink.
Corrective Action(s):
Refill paper towel dispenser as soon as it gets empty. Have spare paper towel rolls in the cupboard under the hand sink.

General sanitation of premises needs improving, especially in the following areas:
- Underneath and behind all equipment
- Underneath and behind all sinks
- Hard to reach areas (behind freezers, coolers, floor corners, ceiling, walls)
- Shelves and storage racks
- Behind chest freezer in kitchen

Clean all areas listed above. Review your sanitation plan with all staff.

Hot holding maintained above 60 degrees Celsius.
- 2-compartment sink is used for manual warewashing:
1. Wash
2. Rinse
3. Sanitize in a 200 ppm bleach solution for 2 minutes
4. Air dry
