Paper towel holder provided for hand sink at far end of sushi bar.
Hand sinks are kept clear for hand washing.
Fly traps (sticky traps) are in use in back storage room. Discussed with sushi chef that the sticky traps should be pulled out all the way to be more effective. In addition all foods in the storage room need to be properly covered to prevent attracting flies. Spouts on large bulk liquid ingredients should be wiped dry with a paper towel to prevent attracting flies.
