Observation (CORRECTED DURING INSPECTION): Bar area glasswasher measured 0 ppm chlorine at the glass surface. New bottle was in the machine with an air bubble through the straw (assumed to be from changing sanitizer concentrate bottle recently)
Corrective Action(s): Ensure that sanitizer concentration is checked twice daily using test strips. Sanitizer must measure 100 ppm chlorine.

=Fruit/Veg walk-in cooler (2C), main walk-in cooler (3C), grill prep cooler and drawers (1C), prep cooler (2C), and bar cooler (4C) measured < 4 degrees C
=Upright freezer measured -18 degrees C. chest freezer not in use at the time of inspection
=Hollandaise hot holding (69C) measured > 60 degrees C
=Low temperature dishwasher measured >50 ppm chlorine at the plate surface
=Sanitizer solution at 200 ppm QUATS available in spray bottles
=General sanitation was satisfactory at the time of inspection, though some cleaning required behind support pillar in bar area staff room
