Observation: Mouse droppings noted on lowest shelves of storage racks, and on some dry ingredient bins.
Corrective Action(s): Clean and sanitize areas affected with mouse droppings. Check for droppings on a daily basis and clean and needed. One bin of puri chips discarded, as lid was not on properly and droppings were on lid.
Keep lowest shelves of storage racks empty. Have more metal tin cats placed in facility.

- Sanitizer solution available at 100 ppm chlorine
- High-temperature dishwasher reached 72C at dish surface during rinse cycle.
- All coolers were maintaining temperatures of 4C or colder
- All freezers were maintaining temperatures of -18C or colder *Freezers need to be defrosted.
- Equipment maintained in sanitary conditions
- Storage areas have been reorganized and de-cluttered. Good. Ensure regular cleaning is done in storage areas as well.

**Follow-up inspection scheduled for next week. Ensure all issues are addressed.
