Observation: Large number of fruit flies were found under the 3-comapartment sink.
Corrective Action(s): Clean pooling water under the sink and clean and sanitize all surface under the sink to remove and debris and fly eggs. Maintain all areas in a clean and sanitary condition at all times.

Observation: 3-compartment sink had pooling water - may indicate a leaking pipe.

Comments

Bakery
-Walk-in freezer was at -13C.
-Upright cooler was at 4C.
-Cake display cooler was at 4C.
-Temperatures checked and recorded daily.
-High temperature dishwasher had a final rinse temperature of 71C on the dish surface (minimum 71C required for proper sanitizing).
-3-compartment sink used for manual warewashing. Quats dispensing at 200ppm.
-Quats sanitizer spray bottles labelled and tested at 200ppm.
-Foods stored off the ground and covered.
-No self-service of foods - bakery foods are currently prepackaged.

Coffee bar:
-Under counter coolers ranged from 2C to 4C.
-Baked foods/cake cooler was at 4C.
-Handwash station accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Cleaning and sanitizing carried out in the bakery area.
-General sanitation good at the time of inspection.
-No signs of pests noted at the time of inspection.
