Observation (CORRECTED DURING INSPECTION): One spray bottle of quats at 50 ppm. Required: 200 ppm quats (for effective sanitizing of food contact surfaces).
Corrective Action(s): Bottle emptied. Ensure sanitizer is maintained at safe and effective concentrations for food contact surfaces.

Observation (CORRECTED DURING INSPECTION): - Raw shell eggs stored in container directly above an open container of salad in the upright cooler located near the cook line.
- Bag of onions stored next to and in contact with a chemical bottle (note: bottle sealed).
Corrective Action(s): Ensure raw animal products (including raw eggs and raw meats) are not stored above ready-to-eat foods in case there is leakage of egg or drippings onto the food below, which will not receive a cooking step.
Ensure food (including onions) is not stored near chemical products to protect food from potential contamination.

304 - Premises not free of pests [s. 26(a)]
Observation: Rodent droppings observed in the following areas:
- Two cabinets located in server area (no storage in these cabinets)
- On the floor where the wall meets the floor, particularly in the back dry storage area (including on the baseboard), and under equipment.
- On the floor in the dishwashing area near the large chemical buckets.
Corrective Action(s): Ensure all of the above-noted areas are properly cleaned and disinfected. A 1 part bleach to 9 parts water solution may be used to disinfect non-food contact surfaces following cleaning. Date to be corrected by: November 29, 2023.
Note: Premises serviced by pest control on a monthly basis. Service reports available, however, most recent service report (from today) not available. Service report to be emailed to the Environmental Health Officer.

Observation: - Accumulation of liquid observed on floor under ice machine.
- Holes or gaps observed in the wall in some areas, including the wall located below the counter where the dipper well is located.
Corrective Action(s): - Remove liquid and clean affected area under ice machine. Pooling liquid may attract pest activity. Date to be corrected by: Today.
- Identify and seal any holes or gaps where pests may potentially enter the premises. Date to be corrected by: December 5, 2023.

Observation: Quats sanitizer dispenser not capable of dispensing quats at time of inspection.

Do not use dispenser in the interim (sign to be posted). Alternate sanitizer (e.g. chlorine based sanitizer) available. Date to be corrected by: November 30, 2023.

Handwashing stations (kitchen, server area, bar, and washroom) are accessible and supplied with hot and cold running water, liquid soap, and paper towels.
Other sinks also supplied with hot and cold running water.
Equipment such as ice machines, bins, and deli slicer stored in sanitary condition. Scoops for ice stored in clean dry containers.
Ventilation canopy in clean condition.
Low temperature dishwasher had a sanitizer rinse residual of 50 ppm chlorine at the utensil surface.
Sanitizer available in sanitizing pails at 100 to 200 ppm chlorine.
Sanitizer available in spray bottles at 200 ppm quats (with one exception--bottle emptied during inspection). Reminder to ensure different sanitizer types are not mixed.
Designated areas available for chemical and personal item storage.
Temperature logs maintained.
*One cooler measured 6 degrees C at time of inspection (undercounter bar cooler). Monitor and adjust as necessary to maintain 4 degrees C or less.
